Under close or immediate supervision, performs cooking and other food preparation duties at a Port Authority Cafeteria. Receives written or oral instructions from Facility Cafeteria Supervisor and Food Services Supervisor on food to be prepared, but uses judgment in the preparation. Work is checked through inspection of food cooking and preparation processes and of completed work. Food is prepared for use in a cafeteria, a dining room and for special occasions. Cooks are responsible for performing their duties in a manner that creates a favorable impression through exceptional customer service and professionalism, below are Cooks responsibilities will include but are not limited to:
Receives and signs for delivery of meats and vegetables, checks quantity and quality and recommends acceptance or rejection of food.
Estimates requirements and list food needed from stock for own phase of the activity. Recommends changes in given weekly menu to suit day’s needs depending on supply of items. Assists in preparation of weekly menu.
Prepares for cooking or service: meats, vegetables, fruits, desserts and occasionally pastry. Prepares basic cooked food requirements for salads and sandwiches, soups and gravy.
Cooks meats, vegetables and soups in variety of styles from standardized recipes provided.
Cleans and is responsible for proper cleaning, care and storage of utensils and equipment used.
Prepares special types of foods for special affairs.
Oversees the work of cafeteria attendant assigned to dish and spot washing.
Performs related work as required.
